I've never had Trappist beer made in Europe. There's a Trappist brewery in Massachusetts that makes a blonde ale that's okay, but not great.

as yeast consume the sugars, they poop out (basically) the alcohol... and also various phenol compounds that produce different tastes/smells (which is why some beer can smell like bananas a bit but contain no banana.. its just the strain of yeast)

You can do that here, too, just not in a grocery store, unless it's beer. Plus every fucking county is different here. I live on the border of two counties, and one bar has to close at 2 and the one across the street can stay open till 4 because it's in a different county. I drive down the damn street and my pistol permit isn't legal because it's a different county. Even the fuckin sales taxes and taxes on alcohol are different.

All my friends thought it was gonna be so much better down south (Florida, North Carolina, etc) when we were in high school and college, because they saw that there was little in the way of income tax and property tax. What they didn't realize is that those states are more heavily reliant on federal dollars than states with higher taxes. If the feds cut how much aid a state gets, then they have to somehow make up that lost revenue without raising taxes.
