In reality, i don't think the water would rise higher in the tube then the water level in the bottle.

yeah, there's gotta be something going on there. The first water than ran through the tube was clear. Unless it was old water or something.

I think there's a small pump hidden in the wood under the bottle, that's why it takes so long before the water starts running through, it blows a lot of bubbles at first, making the water look clearer.

Yes, but you'd still have to lift the cones up. While tracks get higher in the direction of travel, they also get wider apart. Between the individual vectors for each cone cancelling out lateral movement, what you end up with is forward movement with a decrease in height above ground.

The tracks may get higher, but the center of mass on the cones actually descends. It's powered by gravity overall, and you'd have to lift it to reset it.
